Pitahaya—also known as dragon fruit—belongs to the cactus family. It has a thick, smooth skin that changes color from green to yellow as it ripens. Inside, the fruit contains a greyish-white pulp speckled with small, edible black seeds. Compared to red pitaya, yellow pitahaya is notably sweeter and milder in flavor.
To enjoy it, simply cut the fruit in half and scoop out the pulp with a spoon, or slice it into sections. While the pulp is edible and nutritious, the skin should not be eaten. Pitahaya is also valued for its digestive benefits, thanks to its fiber-rich seeds—though if this effect is not desired, it’s best to swallow the pulp without chewing them.
